Happy Belly: Tzatziki Cucumber Tomato Corn and Avocado Salad

During our honeymoon in Greece, we consumed a large amount of mouth-watering dishes. However the consumption of food also led to the increase of our waistlines. I have been in detox mode ever since we got back from the trip, and salad has once again become my best friend since the wedding.

When I was grocery shopping last week, I came across this Tzatziki Cucumber dressing at Safeway. Inspired by the Greece trip, I decided to whip up an easy salad for dinner that night. Cherry tomatoes is a no brainer for me in a salad, same goes with avocados. For the corn I bought fresh corn on the cob. You can use frozen ones but I was feeling extra “gourmet” that day. And cucumber, I mean, the dressing does say Tzatziki Cucumber, so duh.

It was a super easy and perfect summer salad to make. The most time-consuming part was boiling the corn and scrapping the kernels off them. And since I am particular I had to make sure each kernel was separated so that took a little longer. The best thing is you can use almost any kind of dressing with this salad. I have used Trader Joe’s Cilantro Lime dressing before and it was super delicious. If you want to be extra healthy you can just drizzle in olive oil, as the feta cheese will give it the needed flavor. When you drizzle in your dressing, be careful with the amount you put in. You would be surprised how much flavor you get just from a little bit of that drizzle. It is a salad after all, drowning it with dressing just defeats the purpose of “eating healthy.”

INGREDIENTS:
1 Box of Cherry Tomatoes
1 Cucumber (the long ones)
2 Corn on a Cob
1 Avocado
2 to 3 Tbsp Feta Cheese
1 Wedge of Lemon
Tzatziki Cucumber Dressing or Your favorite salad dressing or Olive Oil
Pepper to taste

INSTRUCTIONS:
1. Cut the cherry tomatoes into halves. Chop cucumber and avocado into pieces. Boil corn and scrap kernels off the cob. Mix tomatoes, cucumber, corn kernel, avocado, and feta cheese into a big bowl.
2. Drizzle salad dressing/ olive oil and mix. More if needed.
3. Squeeze in lemon juice.
4. Add pepper to taste.
5. Voilà! It is ready.
